Food and Beverage Management Intern - Normal Cornbelters (Normal, Il)

The Normal Cornbelters, a professional baseball team in the Frontier League is looking for a Food and Beverage Intern(s).    The intern will work directly for the Food and Beverage Director for the Normal Cornbelters 2017 home games and other events at the "Corn Crib"  Duties include, but not limited to, all aspects of food and beverage operation including, inventory, placing orders, vendor relations,  stocking stands, some accounting, cleaning, food safety and scheduling.  

Intern will also have the ability to work with the front office staff to ensure a great fan exerience.  

Expectations, Duties and Skills:

  • Experience in Food and Beverage preferred.
  • Knowledge of food safety preferred.
  • Abilty to multi task and be punctual.
  • Must be willing to work long hours, weekends and Holdiays.
  • Good time managment skills.  
  • Computer skills a plus.  
  • Must have an interest in Food and Beverage or Sports.  

This is an unpaid internship.

Stand Manager (Seasonal) - River City Rascals (O'Fallon, MO)

The River City Rascals Professional Baseball Team, a member of the Frontier League, is currently in search of a Stand Manager for the 2017 season. 

Responsibilities & Duties

•            Complete supervision and operation of concession stand.

•            Maintain complete and accurate inventories.

•            Supervise setup, breakdown and overall cleanliness/sanitation of stand.

•            Supervise the production of all menu items.

•            Provide customer service to fans when necessary.

•            Assist, train and supervise all stand employees.

•            Assist in inventory/ordering

•            Supervis and assist employees in the setup of concession stand, in the preparation of all menu items, consistency being of the utmost importance.

•            Able to provide help and guidance when needed.

•            Effective communicator to employees and management.

Overall Objective: To operate a clean, safe, organized and profitable stand, while providing excellent customer service and a positive work environment for our employee's.

 

Work Environment: Work at a very fast pace, able to do multiple tasks at once, and stay cool headed and organized. Must be a quick thinker and problem solver.

•            Supervise and direct customer service during game and maintains positive fan experience.

•            Supervise all cleanup and proper closing of the concession stand.

Qualifications

•            Possess leadership ability, a pleasant personality and appearance, be reliable and self-sufficient.

•            Must be organized and a problem solver.

Pay Type: Salary

Kitchen Manager (Seasonal) - River City Rascals (O'Fallon, MO)

The River City Rascals Professional Baseball Team, a member of the Frontier League, is currently in search of a Kitchen Manager (KM) for the 2017 season.  The KM serves as a Customer Service leader by insuring that the food we serve always meets or exceeds our standards at all times. While they report to the Operations Manager, it is expected that this person would take responsibility for setting the expectation for all kitchen team members to work as a team to maximize our productivity. The KM is the example of our standards at all times, whether it is cleanliness, organization, or food quality. They are also responsible for the speed and accuracy of the team. The KM must be able to work effectively with limited supervision and demonstrate leadership in order to motivate others.

 

Overview of Responsibilities

• This is a leadership position responsible for the operation of their team to support one of the most critical factors in our success, food quality

• Manage our food quality standards by consistently monitoring the temperature of hot food as well as insuring that our cold food is stored according to standards

• Responsible for food safety

• Perform basic repairs as needed to the kitchen equipment or seek the help of a maintenance person who can perform repairs.

• Develop and train all team members, ensuring a sense of urgency and accountability at all times

• Assign daily work stations and manage breaks

• Ensure cleanliness

• Manage the day-to-day operations of back of the house

• Identify and solve real problems

• Improve performance

 

Specific responsibilities

• Provide oversight to the cleaning program as written

• Insure consistent and accurate records are kept for temperature logs, Critical Control Points, inventory
  control

• Assist in Management of food cost

• Manage inventory rotation and product storage standards

 

Skills Required

• Organizational skills to prioritize daily tasks.

• Positive attitude

• Understanding all key business standards related to food, service and cleanliness

·         Must be servsafe certified

·         Open availability and be present for EVERY event.

• Effectively lead the development of others, including work relationships, with emphasis on an exceptional
  work environment for all employees

• Delegate daily tasks and hold the team accountable for those tasks

• A thorough knowledge of our recipes and food preparation procedures in order to effectively manage the
  standards with kitchen team members

 

Performance Measurements

• Promotional readiness and ongoing development of subordinates

• Personal attention to training completion of all team members as they are hired

• Financial return as measured by the monthly P&L, specifically food cost and R&M

• Overall condition of kitchen and equipment

• Competence in and execution of all labor laws and food safety laws presentation and production

• Overall organization back of the house

Catering Manager (Seasonal) - River City Rascals (O Fallon, MO)

The River City Rascals Professional Baseball Team, a member of the Frontier League, is currently in search of a Catering Manager for the 2017 season.  Under general supervision of Operations Director, the Catering Manager will supervise all in-house catered events, including various service styles.

Responsibilities & Duties

·         Plan and coordinate all aspects of catering, including meeting with clients (if applicable), set up
          execution and breakdown, staffing, sanitation, and fiscal responsibilities.

·         Work with management and staff to ensure cost effective pricing and generate positive revenue from
          events.

·         Supervise staff during all aspects of catered events to ensure high quality service standards and
          presentations are met.

·         Meet with clients (if applicable) to coordinate event-specific details and special requests and develop
          plan to fulfill or exceed client’s expectations.

·         Use information on function sheets to coordinate food and beverage services for scheduled events.

·         Provide and communicate a layout/ diagram of catering events, including details of service.

·         Maintain high sanitation and safety standards in all catering storage rooms and other catering areas.

·         Control all labor schedules in accordance with budgeted costs.

·         Acquire and maintain knowledge of current food and catering trends.

·         Maintain proper stock level of all catering equipment

·         Assist with training, evaluating, and supervising of all catering staff, may include completing staff        
          schedules and providing information about catering events to staff.

·         Related duties as assigned.

 

Minimum Qualifications:

·         High School graduation and one to three years of experience in catering or related food service area

·         Strong supervisory and interpersonal skills.

·         Ability to communicate effectively in both written and oral format.

·         Knowledge of food preparation, presentation and customer service

·         Basic computer skills as required by department.

·         Previous relevant work experience strongly preferred
